As we all know, being in college is busywork, and it can be hard to find time to make dinner every night. Personally, the less time cooking the better because I am impatient. Also, I love eating healthy and trying new things. So, being a junior and doing this for a few years now, I have found some healthy snacks and meals that are easy for other students to make!

The first recipe is lemon chicken pasta (recipe from The Endless Meal). There are 10 total ingredients:

- 2 chicken breasts

- 4 garlic cloves

- 1 lemon

- 1 parsley

- ½ yellow onion

- ½ cup of chicken stock

- 12 oz pasta

- 2 tbsp olive oil

- ½ cup heavy cream

- ½ cup parmesan cheese, grated

First, you want to cook the pasta. Then, cook the chicken and season them with salt and pepper. I always pan fry my chicken, but it can be cooked any way you like. Next, make the sauce by sautéing onions and garlic with chicken stock, parmesan, cream and lemon juice. Once the pasta, chicken and sauce are done, mix all together and enjoy!

Healthy, easy snacks are always a go-to for me, especially in between classes or work (recipes from Eat This, Not That). Here are a few of my favorites:

Monkey toast

- Bread

- Peanut butter

- Bananas

- Chia seeds

Toast your bread, spread a layer of peanut butter on top, add some sliced bananas and top with chia seeds.

Ants on a log

- Celery

- Peanut butter

- Raisins

Rinse and cut your celery, spread peanut butter on the celery, add raisins to the peanut butter on top.

Apple nachos

- Apple

- Almond, peanut or any nut butter

- Granola

- Chocolate chips

Rinse and cut apples into think pieces, drizzle nut butter over them, add granola to the top, add chocolate chips.
